Strawberry, Basil Salsa

I’ve been on a strawberry binge recently. They are best eaten right away so I usually buy just a small basket every few days.  The other day I discovered an extra box in the back of my refrigerator so I got creative and chopped them up with fresh basil from the yard, added my favorite vinaigrette and created a fresh, summery salsa.  Strawberry, basil salsa would also be delicious over grilled fish, on a salad,  in tacos, or just scooped up with chips!

My intention was not to waist the strawberries and I knew they would last a few days longer in the fridge preserved in lime juice as a salsa. This was so delicious we ended up polishing the bowl off in one evening!

Interesting to know 

The strawberry is actually a member of the rose family.  Choose medium berries that are firm, blemish-free, and a deep color red.  Once picked, strawberries will not ripen further.  Strawberries are full of Vitamin C, a potent antioxidant that helps fight free radical damage that can lead to premature aging.


Strawberry, Basil Crostini

Serves 4


  • 1 pint of strawberries
  • 1 cup lightly packed basil
  • 4 ounces Goat Cheese
  • 1 lime
  • Himalayan Sea Salt
  • Baguette
  • *Vinaigrette


Rinse and slice or quarter your strawberries and place in medium size bowl.  Chop basil and add to the berries.  Sprinkle with a teaspoon of Himalayan Sea Salt and squeeze the juice of one lime over the berries and gently mix.  Slice one baguette in to small pieces.  Drizzle with olive oil and grill or bake at 375 degrees until lightly brown.  Remove from oven and allow to cool slightly.  Spread with goat cheese and top with the salsa mixture.

*Vinaigrette: 3 Tablespoons of olive oil plus 1 teaspoon of red wine vinegar, a sprinkle of salt, 1 teaspoon of honey, and 1 or 2 teaspoons of diced shallots.
