beauty in a bowl
Hey beauties! Yesterday I made the perfect Acai bowl, packed full of my favorite beauty boosting ingredients;) If you don’t have all the ingredients, substitute with similar items or your favorite granola.
Let’s get glow-ing!
Sometimes Acai bowls can be loaded with sugar. Read labels and watch the portion size! I like this recipe because it’s not too sugary and it’s tasty;) To prepare this Acai bowl you will be using a packet of frozen Acai (I buy mine at Whole Foods) plus a few berries and a banana. You can substitute whatever fruit you want, just keep the measurements the same. The chewy seeds are so yummy and I use them in place of granola. For added nutrition, add peanut or almond butter to the top!
Beauty in a Bowl
Serves 2
For the seed mix:
- 2 TB buckwheat grouts (bulk section of your natural foods market)
- 2 TB roasted pumpkin seeds (I use salted)
- 1 TB flaxseed
- 1 TB hemp seeds
- 1 teaspoon of honey
- 1 teaspoon of coconut oil
For the bowl:
- 1 (3.5 ounce) Acai packet
- 1 small banana
- coconut, almond, or hemp milk (1 or 2 TB)
- 1/4 cup coconut flakes
- 1/2 cup blueberries (frozen and thawed is fine;)
- 1 TB bee pollen (optional )
- 1/4 cup walnuts or pecans
Start by melting your coconut oil in a skillet. Add the seed mix an stir gently making sure not to burn or create too much heat. Turn off the heat and add a teaspoon or so of honey and stir. Allow to cool.
Run your Acai packet under warm water to soften it. You’ll need it just thawed enough to get it out of the container. I use 1/2 frozen banana with my Acai packet so my bowl is extra thick;) Place in the blender with about 2 TB coconut milk and pulse your mixture to break up the Acai pack. Blend until smooth, an ice cream-like consistency. If you add too much liquid, your bowl will be soupy so add your liquids gradually as you blend.
Top with the seed mix along with your favorite ingredients. I like coconut, bee pollen, berries, and walnuts.
Enjoy!
