 Cool off with these healthy ice cream sandwiches

There is something nostalgic about stuffing something between two graham crackers. S’mores have been on repeat but I know they are super sugary so I’ve been making these as an alternative.  What I like about this recipe is that you can make them with a variety of ingredients to satisfy your craving for something that’s sweet but not too unhealthy.   Sweetened cacao nibs and coconut ice cream is my favorite!

Ingredients:

1 cup truwhip original or regular whip cream | 1  cup ice cream (nondairy options work too!) or vanilla yogurt | 1 cup berries or 1/2 cup cacao nibs or mini chocolate chips | Graham Crackers | 1/2 teaspoon vanilla extract

Method:

Line a cookie tray with parchment paper | Add the whip cream and yogurt or (soft) ice cream to a bowl and stir until combined | Stir in vanilla extract | Add berries or chocolate bits and stir gently | Scoop out ice cream mixture onto graham cracker and make your “sandwich” | Freeze for about 3 hours | Remove your ice cream sandwiches from the freezer and serve immediately
