How to make a Tropical Yogurt Parfait

Mother Nature has a plan.

Every season our fruit and vegetable options change giving us an opportunity to think out of the box (literally!) when meal planning.

Things to think about ~

Step out of your comfort zone and try something new!

When shoppping, use color as your guide.   Brightly colored fruits and vegetables are packed full of nutrition!

Choose locally produced, sustainable produce when you can.

Review the Environmental Working Groups Dirty Dozen.

Summer fruits contain natural sugars and are packed full of Vitamin C, healthy enzymes, and fiber.

Today I’m feeling like something Tropical ;) so I whipped up an easy yogurt parfait.  You can put all the ingredients in a mason jar and eat it on the go or simply enjoy as a mid-day snack.

Gold and green kiwi are currently in season and if you haven’t tried this pretty little fruit, now is the time! Kiwi tastes great in smoothies, mixed in yogurt, or if you are adventurous try mixing kiwi, mango, fresh lime, onion, and hot peppers.  This makes a tasty salsa for grilled fish!

Kiwi contains 100% of our recommended daily allowance for Vitamin C.  So the next time you’re in the market, try it!

8 ounces or more of plain yogurt

1/2 cup granola (choose one that contains less than 6 – 8 grams of sugar per serving)

1/2 banana

Kiwi (gold or green)

1/2 cup pinapple

Coconut and honey for the top!

Begin with a clean parfait container.  I use something that I can put a lid on so I can take it to go.   Start by adding a couple tablespoons of plain yogurt to the bottom of the jar.  From there, get creative and layer in any order.

Yogurt, granola, banana, (more) yogurt, granola, pinapple.

Top with kiwi, coconut and then drizzle with your favorite local honey!
