Healthy-ish chocolate cake

You can make this cake gluten free and vegan if you'd like.

Ingredients

  • 1/2 Sourdough starter You can also use whole milk
  • 1 1/4 cup gluten-free flour
  • 3/4 cup coconut sugar
  • 1 egg
  • 1/2 cup olive or rice bran oil
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup plus 2 tbsp olive oil
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 ounces dark chocolate pieces

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Grease an 8 inch cake pan with coconut oil or butter.

  2. In a large bowl, whisk together milk or sourdough starter, olive oil, egg, and sugar.

  3. Add flour, baking soda, salt, and cocoa powder.

  4. Stir to combine.

  5. Fold in dark chocolate chunks.

  6. Spread mixture into cake pan and bake for 25 minutes or until toothpick inserted in the middle of the cake comes out clean.

  7. Remove from oven, cool, invert and remove the cake from your pan.

  8. Sprinkle with powdered sugar, slice, and serve.
