Fall baking is one of my favorite ways to welcome the season, especially when it means filling the kitchen with the smell of cinnamon, nutmeg, and freshly baked cookies.
These Pumpkin Spice Cookies with Chocolate Centers are soft, warmly spiced, and finished with little pools of melted semisweet chocolate. They have all the familiar flavors of fall, with a simple chocolate center that makes them feel a little extra special.
I love that these cookies don’t need frosting or an elaborate filling. The chocolate is pressed into the centers while the cookies are still warm, creating a rich, glossy finish that pairs beautifully with the pumpkin spices.
They’re just the sort of treat I’d serve with an afternoon cup of coffee, set out when friends stop by, or make on a cool October day when the kitchen feels like the best place to be.
Tips for Making Pumpkin Spice Cookies
Blot the pumpkin purée. Pumpkin adds flavor and moisture, but too much moisture can change the texture of a cookie. Gently blotting the purée helps the cookies hold their shape while keeping the pumpkin flavor.
Don’t skip chilling the dough. A little time in the refrigerator helps firm up the dough and makes it easier to scoop and shape before baking.
Press the chocolate in while the cookies are warm. This is what gives these cookies their signature centers. Add the chopped chocolate as soon as the cookies come out of the oven, and let the residual warmth soften it.
Keep an eye on the baking time. The cookies should be set around the edges but still soft in the middle. They’ll continue to settle as they cool, so there’s no need to wait for the centers to look completely firm in the oven.
What Kind of Chocolate Works Best?
I like semisweet chocolate because it balances the sweetness of the cookie and the warmth of the spices. Chopping a chocolate bar into small pieces also gives you a lovely mix of little shards and larger pieces that melt into the centers.
You can use your favorite semisweet chocolate bar, depending on how rich you like your chocolate.
How to Serve Them
These cookies are lovely served slightly warm with coffee, a latte, or a mug of hot tea. They also look beautiful arranged on a vintage plate for an afternoon gathering or added to a fall dessert tray.
As the holidays get closer, they would make a thoughtful homemade treat to share with a neighbor or tuck into a little tin for someone special.
How to Store Pumpkin Spice Cookies
Allow the cookies to cool completely before storing them in an airtight container at room temperature. For the best texture, enjoy them within a few days.
If you prefer the chocolate centers soft, you can warm a cookie briefly before serving.
These are simple, homemade cookies with familiar seasonal flavors and just enough chocolate to make them memorable. I hope they find a place in your fall baking rotation.

Pumpkin Spice Cookies With Chocolate Center
Ingredients
- ½ cup unsalted butter, softened
- ¾ cup packed light brown sugar
- ¼ cup granulated sugar
- 1 egg yolk
- A scant ½ cup canned pumpkin purée, blotted to remove excess moisture (increased from ⅓ cup to help the dough come together more easily)
- 1 teaspoon vanilla extract
- 1¾ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
- 4–5 ounces chopped semisweet chocolate
Instructions
- Prepare the pumpkin. Place the pumpkin purée on paper towels and gently blot away excess moisture. Measure a scant ½ cup after blotting.
- Cream the butter and sugars. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until well combined and creamy.
- Add the wet ingredients. Mix in the egg yolk, pumpkin purée, and vanilla extract until smooth.
- Combine the dry ingredients. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Make the dough. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The dough should be thick but hold together easily. If it still seems unusually dry or crumbly, check that the flour wasn’t over measured before adding anything else.
- Chill. Cover the dough and refrigerate for 30–45 minutes.
- Preheat the oven. Heat to 350°F and line a baking sheet with parchment paper.
- Shape and bake. Scoop the dough into evenly sized balls and arrange them on the prepared baking sheet, leaving space between each cookie. Bake for 10–13 minutes, until the edges are set and the centers are still soft.
- Add the chocolate. Immediately press chopped semisweet chocolate into the center of each warm cookie, allowing it to soften and melt.
- Cool and serve. Let the cookies rest on the baking sheet for several minutes before transferring them to a cooling rack.
Notes
- Use canned 100% pumpkin purée, not pumpkin pie filling.
- Blotting the pumpkin helps prevent excess moisture from making the cookies too cakey.
- The increased pumpkin amount is a small recipe adjustment that still needs to be tested. The cookies may bake up slightly softer than the original batch.
- For the prettiest chocolate centers, reserve a few pieces of chopped chocolate to press into the cookies immediately after baking.
- Store completely cooled cookies in an airtight container at room temperature.
