Sausage a& Burst Tomato Pasta

Ingredients

  • 12 ounces spaghetti
  • 12-16 ounces Italian Sausage, sliced into rounds
  • 2 pints Sungold tomatoes
  • 3-4 cloves garlic, chopped
  • 3-4 tbsp olive oil
  • 1/2 tsp red pepper
  • 1/2 cup pasta water
  • 1/4 -1/3 cup Parmesan cheese
  • Handful of basil
  • salt and pepper to taste

Instructions

  1. Bring a large pt of salted water to a boil and cook spaghetti until al dente.
  2. While the pasta cooks, heat a large skillet over medium-high heat.
  3. Add sausage and cook until brown and fully cooked.
  4. Add olive oil, garlic, and red pepper flakes. Cook about 30 seconds.
  5. Add the cherry tomatoes and a pinch of salt.
  6. Cook 8-10 minutes, stirring occasionally until the tomatoes soften and begin bursting into a red sauce.
  7. Transfer spaghetti directly into the skillet.
  8. Add 1/4-1/2 cup pasta water and toss until glossy and coated.
  9. Stir in Parmesan and most of the basil.
  10. Plate and add additional Parmesan and basil.
