Smash Burgers with Alabama White Sauce

I've always considered smash burgers as a southern thing however they were first popular in the 1950's in places like Wichita Kansas. The sauce makes these burgers feel southern. There are different versions of Alabama White Sauce. I like mine a little bit less spicy. If you'd like to make the sauce "lite" - replace some of the mayonnaise with Greek yogurt.
Ingredients
- 1 pound ground beef (4 burgers)
- salt and pepper to taste
- 2 tsp Kinders (The Steak Blend)
- 4 ounces shredded Colby Jack Cheese, shredded
- Optional: (Organic) American Cheese Slices
- 1 onion, sliced plus 2 tbsp butter for frying
- Sauce: 1/2 cup mayonnaise, 1 tsp apple cider vinegar, 1 tsp horseradish, 1 tsp Worcestershire sauce, 1/4 squeezed lemon, 2 tsp mustard and 1 tsp honey (splash of hot sauce optional)
- 4 hamburger buns
Instructions
- Make the SAUCE: Mix the mayo plus 1 tsp apple cider vinegar, 1 tsp horseradish, 1 tsp Worcestershire sauce, 1/4 squeezed lemon, 2 tsp mustard and 1 tsp honey (splash of hot sauce optional). Can be made ahead of time. Keep in the refrigerator.
- In a small skillet, add butter. When the butter begins to sizzle, add the sliced onions. Sautee until onions are translucent and starting to brown. Turn off the heat and set aside.
- Make the burgers. In a medium size bowl, add meat, salt, pepper and shredded cheese. Mix and form 4 equal beef patties.
- Heat skillet. Add beef patties. Place a piece of parchment paper on top of the burgers. Use a spatula or potato masher to press the burgers as flat as you can. Sprinkle with Kinders seasoning. Flip and add extra cheese and onion. Continue cooking until done (another 2 minutes).
- Assemble burgers: spread the bottom bun with Alabama White Sauce. Top with extra onion, lettuce, and pickles plus additional white sauce if you'd like.
