This delicious cookie begins with brown butter. I just love the nutty taste this adds to my baked cookie recipes. It takes just a few minutes. All you need to do is gently simmer the butter until the particulates separate and you notice brown specs. Once the butter is smelling nutty and looks brown, remove from the heat, allow to cool and proceed with your recipe.

Pumpkin Oatmeal Cookies with Maple Glaze

Ingredients

  • 1 cup (2 sticks) butter
  • 1 cup packed brown sugar
  • 1/2 cup pumpkin puree
  • 1 egg plus 1 yolk
  • 1 tbsp vanilla
  • 2 cups all-purpose flour
  • 2 cups old fashioned oats
  • 2 tsp pumpkin pie spice
  • 1/2 tsp kosher salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • For the glaze: 1/2 cup melted butter, 1 cup powdered sugar, 6 tbsp maple syrup. Whisk until smooth.

Instructions

  1. Preheat oven to 350 degrees F. Place parchment paper on a cookie pan.
  2. In a medium saucepan, melt butter until foamy and fragrant. When particulates separate and you see brown specs, turn off the heat and allow to cool slightly.
  3. To the cooled butter, add the brown sugar, egg + egg yolk, pumpkin puree, and vanilla. Whisk to combine.
  4. Add oatmeal, flour, salt, baking powder, baking soda. Whisk to combine.
  5. Spoon cookie dough onto parchment paper. Bake for 8 minutes. Remove from the oven. Using a fork, gently press down the cookies. Return to the oven for another 2 or 3 minutes.
  6. Remove from oven and allow cookies to cool on a wire rack.
  7. Meanwhile, make the glaze. In a small bowl, mix melted butter, powdered sugar, and maple. Whisk until smooth. Spoon over cookies.

Notes

These cookies freeze well if you'd like to pack some away for the busy holiday season ahead.
