Sunday scones

I like to make Sunday breakfast extra special, these scones are perfect for that. You can form the dough triangles the night before and then bake the next day if you want to save time and clean up. These are best served hot, right out of the oven. We like them with butter and jam!

What you’ll need:

  • unsalted butter
  • flour
  • baking powder
  • salt
  • sugar
  • egg
  • flour
  • vanilla
  • buttermilk

Make sure to sift your dry ingredients and use very cold butter. I use unsalted butter for baking. Salt serves as a natural preservative for your butter. If you want to control the salt in your baking recipe, use unsalted butter or reduce added salt in your recipe. If you are using salt on bread for example, sprinkle your favorite salt on top for extra flavor. This FRENCH salt is delicious. When mixing grated butter in to the flour mixture, use a pastry blender or fork to mix the cold butter and flour together.

I usually don’t prefer scones when I’m at a coffee shop as they tend to be too heavy for my taste. These scones are light and not too sweet. I made them without any additions, but feel free to add nuts, berries, or chocolate chips if you’d like.

I’m calling them Sunday Scones because I tend to bake them for brunch. They are so light and delicious with just the right amount of sweets. Scones come in so many varieties. I prefer a plain scone, brushed with egg, and just a light sprinkling of granulated sugar. Once out of the oven, top with lots of butter or slotted cream, and your favorite jam.

Simple Sunday Scones

So simple to make and deliciously light and buttery.

Ingredients

  • 2 cups all-purpose flour spooned and leveled
  • 1/4 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 8 tbsp or one stick of cold butter, grated or cubed
  • 1/2 cup buttermilk
  • 2 eggs (reserve one for brushing on scones)
  • 2 tsp vanilla extract
  • 1/4 cup sugar for sprinkling on scones prior to baking
  • 1 cup berries, chocolate chips or any other add in is optional

Instructions

  1. Preheat oven to 400 degrees F. Line two baking sheets with parchment paper and set aside.
  2. In a large bowl, sift flour, baking powder, and salt.
  3. Add sugar, whisk.
  4. Shred or cube cold butter into flour mixture. Make sure butter is very cold.
  5. Use a pastry blender or fork to mix the butter into the flour mixture. Continue mixing until a rough dough ball is formed.
  6. Whisk cream, egg, and vanilla in a small bowl or measuring cup. Make a well in the center of the flour and butter mixture. Pour the egg and cream mixture in the center. Mix well with a fork or your hands. Add-ins can go in now if you are adding them.
  7. Turn out on to floured surface. Form a ball and divide in half.
  8. Form a disc and use a pastry scrapper to cut in to 6 triangles. Place on parchment paper lined cookie sheet. Brush with whipped egg mixture, sprinkle with sugar and place on baking sheet.
  9. Bake for about 12 minutes or until just starting to turn brown on the edges.
  10. Remove from oven and serve with butter or slotted cream and jam.

    Notes

    Scones can be frozen before or after cooking.
