This is so good and would be delicious weekday family meal or served on a warm summer weekend when you don’t feel like grilling or putting something in the oven.
This tortellini recipe has those basic veggies like roasted red peppers, fresh spinach, and cherry tomatoes from the garden making this an excellent choice if you are looking for ways to squeeze in extra veggies and if you want to skip the meat.
Feel free to customize the recipe adding whatever you have in the refrigerator. You could also add chopped asparagus or peas for a tasty spring meal.
Tortellini with Spinach and Red Peppers
A delicious and healthy meatless meal.
Ingredients
- 16 -ounces of Tortellini
- 2 cloves garlic
- 1 shallot, diced
- 1 cup or more of chicken, beef, or bone broth
- 2 Tablespoons flour
- 1/2 cup roasted red pepper
- 1 cup or more of fresh or frozen spinach
- 1 cup sliced cherry tomatoes
- 1/3 cup cream
- 1/3 cup Parmesan Cheese
- 2 Tablespoons butter
- 2 Tablespoons olive oil
Instructions
- In a skillet or cast iron pan, saute shallot in olive oil and butter until slightly brown. Add garlic and cook until fragrant.
- Add flour and stir until incorporated.
- Add Add 1/2 cup broth and stir until mixture begins to thicken a bit and then add the cream.
- Add red peppers. tomatoes, and spinach. Gradually add enough broth to create a creamy sauce. Allow liquid to cook done a little bit.
- Add the tortellini and cook until done. Add additional broth as needed.
- When the tortellini is cooked, plate and top with Parmesan cheese.
