Our guests use it as a dip and also spread it on burgers and hot dogs. It’s gooey, cheesy, and full of flavor! My version isn’t too spicy but feel free to add more jalapeno if you’d like!
Tips and tricks
So one thing you likely know about me is that I choose my ingredients carefully when cooking. For our queso, I don’t use processed cheese or corn starch. To get the thickness right, I start with a roux and then add half and half. Shred your own cheese to avoid stabilizers and stir constantly while adding the cheese. Feel free in adjust the liquids for desired thickness. You can make this the day before an event and reheat the next day. Enjoy!

Super creamy 15 minute QUESO dip (Mexican cheese dip)
Ingredients
- 2 tablespoons butter
- 1/2 small onion, diced
- 1 jalapeños, seeded and diced
- 1 serrano pepper, diced
- 2 clove garlic, diced
- 2 tablespoons flour
- 4 ounces chopped chilies (I use Ortega canned chilies)
- 1 cup half and half
- 2 plum tomatoes, diced
- 3/4 tsp salt
- 1/8th tsp pepper
- 8 ounces pepper jack cheese, shredded
- 8 ounces cheddar cheese, shredded
- 1/2 cup sour cream
Instructions
- Melt butter in saucepan on medium heat. Add diced onion and cook until onions are translucent.
- Add garlic and peppers - saute until fragrant. Add flour, salt, pepper, and chilies. Stir until mixed (about 30 seconds).
- Add milk. Stir until slightly thickened.
- Add cilantro and tomatoes.
- Turn down the heat to simmer/low. Gradually add the shredded cheese to the white sauce until completely melted. Repeat until all the cheese has been added. Make sure to shred the cheese yourself as pre-shredded has fillers that will prevent the sauce from being smooth.
- Remove from heat when thickened. Add the sour cream and stir.
- Top with tomatoes and extra cilantro if you'd like. Serve with your favorite chips!
