Spooky HalloweenSnack Mix

Autumn weather has brought cooler temperatures has us craving some of our favorite fall foods.  I prepared a  batch of Spooky Halloween Snack Mix over the weekend and added it to our picnic lunch for our visit to the pumpkin patch.  It’s was the perfect mix of crunch, salty, and a little sweet to much on while we were enjoying a beautiful day at the farm.  The cool, crisp air and gorgeous fall color has been over the top this year and I’ve been sharing pictures on my instagram stories!

What I like most about our Autumn Snack Mix is that it’s not too sugary but seems to satisfy the attack of the munchies:) Serve it to the kiddos after school or try adding it to the menu when you are hosting a football game.   You may adjust the amount of caramel you add and use gluten free cereal and pretzels if you’d like.  I alternate between salty pumpkin seeds or raw cashews for variety.

Autumn Snack Mix

Here is my (healthier version) of the traditional snack mix.  Serve a bowl to the kiddos or when you have a group over for pumpkin carving or a football game.  I used a low sugar cereal along with roasted pumpkin seeds and popcorn made without hydrogenated fats.  The caramel is pure sugar :) but I only used a little bit.

  • 1 cup Chex or Oat Ceral
  • 1 cup Popcorn
  • 6 Caramels
  • 1 TB Cream
  • 1 cup Roasted Cashews (I used 1/2 cup of roasted pumpkin seeds)
  1. Preheat oven to 250 degrees.  Mix cereal, popcorn, and cashews or pumpkin seeds into a large bowl and set aside.  Melt caramel in the microwave or stove top with a little whipping cream.  Line a cookie tray with parchment paper and spread the snack mix evenly.  Use a spoon to add the melted caramel.  Bake for about 15 minutes.  Allow to cool and break up the mixture.  Serve immediately or put the mix in a zip lock bag for later!
