The other day I was craving chocolate so I mixed a few chocolate chips with some peanut butter and drizzled it with maple syrup. It was surprisingly delicious! So … I decided to take it a step further and make my own peanut butter chocolate cups. You can make them regular or mini size cupcake size.
Peanut Butter Chocolate Cups
These are simple to make, aren't too sugary, and will satisfy your sweet tooth :)
Ingredients
- 2 chocolate bars (I use dark chocolate) or about a 1 1/2 cups chocolate chips - more if needed.
- 2 or 3 Tb maple syrup
- 2 Tb protein powder or almond flour (I used a combination of both)
- 2/3 cup (or more) creamy peanut butter*
- Course salt for the top
Instructions
Prepare muffin tins (large or small)
Melt about 1/2 the chocolate. I did this in my microwave. Heat chocolate with 30 second intervals making sure not to burn your chocolate. Stop heating right before all the chocolate melts and stir until dissolved. You may also heat on the stove over water.
Fill each muffin container with about a tablespoon of melted chocolate. Freeze for a few minutes.
Meanwhile mix the peanut butter, protein powder/flour, vanilla, and maple syrup until smooth.
Spoon mixture over chocolate in the muffin container.
Freeze again -
Melt remaining chocolate.
Spoon over frozen peanut butter cups and then sprinkle with course salt. Enjoy!
Notes
optional: Heat the peanut butter for a few minutes to make it easier to work with.
