Do you ever find over-ripe fruit in your fruit bowl? That was the case the other day with peaches so I made this easy peach cobbler recipe that was such a hit that I thought I’d share the recipe. To save time I bought ready made biscuits for the topping and it was delicious! For the long weekend ahead, try this recipe out for brunch or enjoy as dessert with some vanilla ice cream!
Easy Peach Cobbler
Ingredients
1/4 cup sugar
1/4 cup maple syrup
3 teaspoons of cinnamon (1/2 for peach mixture and 1/2 for biscuits)
1 tablespoon of arrowroot powder or cornstarch
5 cups of peaches or 2.5 pounds
8 biscuits (make your own, here – or purchase ready to bake variety)
Process
Place the first four ingredients in a medium size saucepan and simmer until thickened and bubbly. Add the cut up peaches (I leave the skin on) and simmer until the fruit cooks down a bit and fruit begins to caramelize. Remove biscuits from container. Place biscuits on top of the peach mixture and bake in a preheated oven for 25 to 30 minutes or until golden brown. Serve warm as is or with a scoop of your favorite vanilla ice cream!

Hi Lauren, I haven’t tried it with gluten free biscuits:) I’m sure you can do that and it would be just as tasty!
