If you’re looking for a delicious and super moist Banana Bread Recipe that’s full of sweet bananas and toasted walnuts, go no further! Today I’m sharing our tried and true family recipe that’s always a hit.

What we like about this recipe

  • You can customize the recipe. Besides walnuts, add in raisins or chocolate chips.
  • Freezes well.
  • Quick and simple to put together.

Here’s what you’ll need to get started

  • loaf pan (this one is nontoxic too!)
  • a few over-ripe bananas (feel free to reduce added sugar if your bananas are very ripe)
  • all-purpose flour
  • butter
  • 1/2 cup roasted walnuts
  • raisins or chocolate chips optional
  • vanilla extract
  • sugar and/or honey for your sweetener

Tips:

  • If your bananas are really ripe, feel free to reduce added sugar.
  • This banana bread freezes well. Wrap in saran wrap and store in a zip lock bag.
  • Add ins are welcome! Use raisins, various nuts, and chocolate chips.
  • If you don’t want to make the brown butter, you can use a stick of butter instead.
  • You don’t need a mixer! If you are using browned butter – just whisk your ingredients.

Banana Bread with Brown Butter

A delightful snack or breakfast cake with just the right amount of sweetness. The brown butter is a game-changer!

Ingredients

  • 3 over-ripe bananas
  • 1/2 cup (1 stick) butter - cut into cubes to make brown butter
  • 1/4 cup granulated sugar
  • 1/4 cup honey
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 2/3 cup toasted walnuts
  • 1/2 cup chocolate chips (optional)

Instructions

  1. To make brown butter: cut butter into cubes and place in a saute pan. Whisk until the milk solids sink and the butter turns a golden color. Cool before mixing sugar.
  2. Preheat oven to 350 degrees F. Grease and flour a bread loaf pan. Add a horizontal piece of parchment paper to the center of the loaf pan. This step isn't necessary however I find it easier to remove the banana bread when there's a little bit of parchment paper in the center of the pan.
  3. Lightly roast walnuts in a hot skillet. Stir continuously so they do not burn. When cooled slightly, chop and set aside.
  4. In a medium size mixing bowl, cream butter and sugar/honey.
  5. Mash the bananas and add to the batter along with the eggs.
  6. In another bowl, whisk flour, baking soda and salt. Add to the banana batter.
  7. Add vanilla and mix in walnuts and chocolate chips if you'd like.
  8. Pour into prepared loaf pan and bake at 350 degrees F. for about 55 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the banana bread to rest for about 10 minutes and then invert and place on a wire rack to cool.
