Banana Bread with Brown Butter

A delightful snack or breakfast cake with just the right amount of sweetness. The brown butter is a game-changer!
Ingredients
- 3 over-ripe bananas
- 1/2 cup (1 stick) butter - cut into cubes to make brown butter
- 1/4 cup granulated sugar
- 1/4 cup honey
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2/3 cup toasted walnuts
- 1/2 cup chocolate chips (optional)
Instructions
- To make brown butter: cut butter into cubes and place in a saute pan. Whisk until the milk solids sink and the butter turns a golden color. Cool before mixing sugar.
- Preheat oven to 350 degrees F. Grease and flour a bread loaf pan. Add a horizontal piece of parchment paper to the center of the loaf pan. This step isn't necessary however I find it easier to remove the banana bread when there's a little bit of parchment paper in the center of the pan.
- Lightly roast walnuts in a hot skillet. Stir continuously so they do not burn. When cooled slightly, chop and set aside.
- In a medium size mixing bowl, cream butter and sugar/honey.
- Mash the bananas and add to the batter along with the eggs.
- In another bowl, whisk flour, baking soda and salt. Add to the banana batter.
- Add vanilla and mix in walnuts and chocolate chips if you'd like.
- Pour into prepared loaf pan and bake at 350 degrees F. for about 55 minutes or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to rest for about 10 minutes and then invert and place on a wire rack to cool.
