They are simple to make and freeze well so on those busy mornings when you are literally running out the door, pull a banana protein muffin out of the freezer, microwave and go.
So simple to put together. You’ll need a few ripe bananas, protein powder, walnuts and a few other pantry staples.

Banana Protein Muffins

So delicious and are less sugar and have more protein than most muffins. For that reason, I'm putting them in the 'breakfast' category.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 ripe bananas
- 2 eggs
- 1/4 cup maple syrup
- 1/4 cup brown sugar
- 6 tbsp melted butter
- 2/3 cup chopped walnuts
- 1 scoop of vanilla protein powder
Instructions
- Preheat oven to 350 degrees F. Line muffin tin with 12 liners.
- To a medium size bowl, add flour, baking powder, baking soda, and salt. Whisk.
- Mash 3 ripe bananas in a large bowl.
- Add melted butter, protein powder, maple syrup, and brown sugar.
- Add 2 eggs, mix by hand or with a mixer.
- Fold in nuts.
- Spoon in to prepared muffin tins.
- Bake for about 20 minutes or until starting to brown and done on the inside.
- Serve immediately with butter or just grab and go!
Notes
Freeze for up to 2 months in a freezer proof container.
