If you are looking for hearty winter dinner this recipe is for you!
What you’ll need:
Unlike Chicken Chili with Roasted Veggies and my Three Bean Chili, this Hearty Beef Chili recipe has no beans. I like to serve it with lots of condiments and fresh sourdough bread.
Pick up a combination of chuck/stew meat and ground beef for this recipe. I recommend 1/3 to 1/2 pound per person. You’ll need onion, garlic and seasonings. I like to add a little bit of crushed red pepper, cumin, and chili powder for an extra kick. Beef or bone broth adds extra rick flavor and then I add diced tomatoes (fire roasted for added seasonings). Plan a few hours to prepare and cook your chili. The longer the chili simmers the more tender the meat becomes. Allow to simmer for at least 2 or 3 hours. This is an excellent make-ahead meal. Allowing the chili to sit for a day or so enhances the flavor.
Serve with chips or homemade BREAD.

Hearty Winter Chili
Ingredients
- 3 pounds cubed chuck/stew meat
- 1 pound ground beef
- 2 tbsp olive oil
- 2 or more tsp salt
- ground pepper to taste
- 1 onion, diced
- 6 cloves minced garlic
- 1 heaping tbsp ground cumin
- 1 tbsp chili powder
- 2 tsp red pepper flakes
- 14 ounces beef or bone broth
- 28 ounce can + one 14 ounce can of fire roasted diced tomatoes
- Condiments: sour cream, cheese, bread, chips, cilantro, etc.
Instructions
- Heat oil in Dutch oven.
- Add beef cubes and sear on medium heat. Remove from Dutch oven or stock pot.
- Add ground beef and cook until brown.
- Add chopped onion and cook until onion begins to brown.
- Add garlic and spices. Cook until fragrant.
- Add diced tomatoes and allow to simmer for about an hour. Add water as needed to cover meat.
- Add broth and continue cooking until beef cubes fall apart, Continue to add extra water or broth as needed.
- Serve with sour cream and cheese.
