These are just so delicious and are one of my favorite holiday cookies. I started making these for my kids years ago and they have become a Christmas tradition. Serve these with a glass of cold milk!

Yield: 2 dozen cookies
Iced Soft Ginger Cookies
A delightful Christmas cookie that will take you take to your childhood. Start a tradition and make these cookies for your family!
Ingredients
- 1 stick or 8 tbsp butter
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 2 eggs
- 1/3 cup molasses
- 2 1/2 cups all-purpose flour
- 2 tsp baking soda
- 1/4 tsp allspice
- 1 tsp ground ginger
- 1/2 tsp cloves
- 1/4 cup sugar to roll dough balls in.
- ICING: 1 tablespoon melted butter, 1 cup powdered sugar, 2 tbsp or more of milk to achieve desired consistency for dipping.
Instructions
- Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
- Cream butter and sugar in a large bowl.
- Add eggs and molasses
- Mix dry ingredients in a separate bowl.
- Add dry ingredients to wet ingredients.
- Form small balls of dough and roll in sugar.
- Place dough balls on cookie sheet and lightly press with the back of a fork.
- Bake 8-10 minutes or until center is set.
- Whisk glaze.
- Dip cookies in glaze.
- Serve now of freeze for later!
