These are just so delicious and are one of my favorite holiday cookies. I started making these for my kids years ago and they have become a Christmas tradition. Serve these with a glass of cold milk!

Iced Soft Ginger Cookies

A delightful Christmas cookie that will take you take to your childhood. Start a tradition and make these cookies for your family!

Ingredients

  • 1 stick or 8 tbsp butter
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 eggs
  • 1/3 cup molasses
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking soda
  • 1/4 tsp allspice
  • 1 tsp ground ginger
  • 1/2 tsp cloves
  • 1/4 cup sugar to roll dough balls in.
  • ICING: 1 tablespoon melted butter, 1 cup powdered sugar, 2 tbsp or more of milk to achieve desired consistency for dipping.

Instructions

  1. Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
  2. Cream butter and sugar in a large bowl.
  3. Add eggs and molasses
  4. Mix dry ingredients in a separate bowl.
  5. Add dry ingredients to wet ingredients.
  6. Form small balls of dough and roll in sugar.
  7. Place dough balls on cookie sheet and lightly press with the back of a fork.
  8. Bake 8-10 minutes or until center is set.
  9. Whisk glaze.
  10. Dip cookies in glaze.
  11. Serve now of freeze for later!
