Last week I ordered salmon salad at a local restaurant and enjoyed it so much I decided to come home and recreate it! It’s packed full of my favorite beauty foods and tastes delicious. Sometimes food that’s good for us doesn’t always deliver in the “tastes good” and “fills you up” department so when I find a meal that meets all my criteria, I get excited!
Summer Salad | Tomato, Blueberry, Salmon Salad
Before we break down the recipe, let’s talk about the importance of diet and skin health. I frequently get asked if there are any foods with proven skin benefits. In short I’d say that I don’t believe there is a single diet, nutrient, or super food that is good for the skin. The best way to take care of your skin is to have a diet that is good for your general health, one that’s high in omega 3 fatty acids, colorful fruits and vegetables, and contains healthy fats from avocado, nuts, and seeds.
Tomato, Blueberry, Salmon Salad: Let’s break it down
Blueberries are packed full of vitamin C, a potent antioxidant that is excellent for overall health and crucial for collagen (the main protein in sin) production. I always have blueberries on hand, in the freezer or fresh if they are in season.
The bright color in tomatoes comes from an antioxidant called Lycopene, another antioxidant that can help defend our skin from UV radiation which is ideal for those of us looking to keep our skin youthful.
The take-away: Antioxidants in general help us fight the free radicals we come in contact with daily. Free radical damage has been linked to the development of heart disease, many cancers, as well as accelerated aging.
Summer Salad | Blueberry, Tomato, Salmon Salad
serves 4
Gather
1 cup cherry tomatoes
2 Serrano peppers
1 cup blueberries
1 pound of salmon
2 tablespoons of EVOO
salt and pepper
1 lemon
Process
Prepare salmon: Wash, dry and place on a cooking pan. Squeeze the juice of 1 lemon over your salmon and then drizzle with olive oil. Sprinkle with salt and pepper and bake in the oven at 350 degrees until flaky (about 25 minutes). I remove my salmon a few minutes before it’s ready to allow it to finish cooking on the pan. Allow to cool slightly. Break about the salmon and remove bones.
Wash and try tomatoes and blueberries. Slice the tomatoes in half and chop up one or two Serrano peppers. Combine the berries, tomatoes, and peppers in a serving bowl. Add salmon and toss with your favorite vinaigrette.
