How to Make Cheesy Chicken Gnocchi

I took a short cut here and bought a store bought whole cooked chicken. This is so simple and the chicken is already flavored so you’ll need less seasoning while cooking. To get the meat off the bones quickly, I use these gloves. If you’d rather make your own chicken, start by seasoning your chicken with salt, pepper, and Italian seasoning. Sauté it in a large skillet with a little olive oil until golden brown and cooked through. Remove the chicken from the pan and set it aside for a moment.

Next, add the garlic and sun-dried tomatoes to the skillet. Cook them briefly so the garlic becomes fragrant and the tomatoes have a chance to release even more of their delicious flavor.

Pour in the chicken broth and heavy cream, then add the gnocchi. Let everything simmer until the gnocchi is tender and the sauce begins to thicken.

Stir in the spinach and let it wilt into the creamy sauce. Add the cooked chicken back to the pan, followed by the Parmesan.

Give everything a good stir and let the cheese melt into the sauce.

And that’s it! Dinner is ready.

Tips for the Best Chicken Gnocchi

Don’t overcook the chicken. Bite-sized pieces cook quickly, so keep an eye on them and remove them from the pan as soon as they’re cooked through.

Use the oil from the sun-dried tomatoes. If your tomatoes are packed in oil, a spoonful of that flavorful oil is fantastic for sautéing the garlic and tomatoes.

Freshly grated Parmesan makes a difference. It melts more smoothly into the sauce and gives the dish a richer flavor.

Add the spinach at the end. Fresh spinach wilts quickly, so there’s no need to cook it for long.

Want it extra cheesy? Add another handful of mozzarella on top and let it melt before serving.

Cheesy Chicken Gnocchi

Ingredients

  • One pound Gnocchi
  • 2 tbsp butter
  • 3 cloves garlic
  • 2 tsp smoked paprika
  • 12 cup chopped sun-dried tomatoes
  • 1 cup Parmesan cheese
  • 2 or more cups fresh spinach leaves
  • 1 cup whipping cream
  • 1 cup (or more) of chicken broth
  • salt and pepper to taste

Instructions

  1. Melt butter in skillet and add chopped garlic. Saute until fragrant - about 30 seconds.
  2. Add chicken broth and then the cream. Stir gently.
  3. Add sun-dried tomatoes, smoked paprika, and gnocchi. Simmer for a few minutes.
  4. Add chicken. Stir until incorporated.
  5. Add spinach. Stir until wilted.
  6. Add salt and pepper to taste. Serve.
