These Strawberry and Strawberry Muffins are perfect for mornings like that. To make them extra special I added Cacao Nibs because you all know how much I love chocolate! The batter is soft and slightly sweet with subtle strawberries flavor and just enough richness from the jam and butter to make them feel like a small treat.
You don’t need to over-think these. Just simple ingredients, one bowl, and a quiet moment in the kitchen while they bake.

Tips for the best muffins
- *make sure to use SWEETENED cacao nibs
- Use a strawberry Whey protein powder – I use this one.
- Toss strawberries in a little flour before folding in
- Don’t over mix the batter
- Fill muffin cups nearly full for a soft dome
- Add a sliced strawberry and a few cacao nibs to the muffin top prior to baking
Chocolate Chip Strawberry Muffins
Ingredients
- 1 3/4 cup all-purpose flour
- 1 scoop of Strawberry Protein Powder
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp kosher salt
- 1/2 cup honey
- 1/2 cup strawberry jam
- 2 eggs
- 1/2 cup Greek yogurt
- 1/2 cup whole milk Ricotta cheese
- 1/3 cup melted butter
- 1 tsp vanilla
- 1/2 cup milk or buttermilk
- 1 cup fresh strawberries, chopped
- 1/3 cup Cacao Nibs (folded in and/or sprinkled on top)
- 1 or 2 tbsp strawberry jam - to swirl
Instructions
- Preheat oven to 350 degrees F.
- Whisk dry ingredients: flour, protein powder, baking powder, baking soda, sugar, and salt.
- In another bowl mix wet ingredients: eggs, yogurt, milk, vanilla, melted butter.
- Combine wet and dry - don't over mix.
- Mix jam with sliced strawberries and cacao nibs.
- Fold into wet/dry ingredient mixture. Don't over mix.
- Spoon mixture into muffin containers
- Add a slice of strawberry or extra cacao nibs to the top of each muffin if you'd like.
- Bake 18-20 minutes.
- Cool before eating.
Notes
You can make these muffins with one cup Ricotta or divide with whole milk Greek yogurt.
