They come together in minutes – no mixer or oven needed! These pull-apart cookie bars deliver that perfect mix of soft, chewy marshmallows, crunchy nuts, and rich, glossy chocolate. I first had a version of these at our neighborhood cookie exchange last year and immediately knew they needed a spot in my December baking line up. Bring a batch to your next gathering and watch them disappear long before anything else on the dessert table. They’re simple, festive, and absolutely irresistible.

Easy No-Bake Rocky Road Bars

Ingredients

  • 1 (10oz) bag mini marshmallows
  • 1 cup creamy peanut butter
  • 2 cups chocolate chips - or 1 cup butterscotch chips + 1 cup chocolate chips
  • 2 cups roasted peanuts (salted)

Instructions

  1. Line a 9 by 13 inch pan with parchment paper leaving an overhang on two sides for easy lifting. You can also serve these right out an unlined pan.
  2. In a large saucepan over low heat, melt the chocolate chips and peanut butter together. Stir constantly until smooth and glossy - don't burn.
  3. If you'd like the marshmallows melt, add immediately - or wait until mixture is slightly cool and then add the marshmallows.
  4. Fold in marshmallows and peanuts.
  5. Spread mixture in baking pan until evenly coated.
  6. Refrigerate 2 hours. Slice and serve.
