Easy No-Bake Rocky Road Bars
Ingredients
- 1 (10oz) bag mini marshmallows
- 1 cup creamy peanut butter
- 2 cups chocolate chips - or 1 cup butterscotch chips + 1 cup chocolate chips
- 2 cups roasted peanuts (salted)
Instructions
- Line a 9 by 13 inch pan with parchment paper leaving an overhang on two sides for easy lifting. You can also serve these right out an unlined pan.
- In a large saucepan over low heat, melt the chocolate chips and peanut butter together. Stir constantly until smooth and glossy - don't burn.
- If you'd like the marshmallows melt, add immediately - or wait until mixture is slightly cool and then add the marshmallows.
- Fold in marshmallows and peanuts.
- Spread mixture in baking pan until evenly coated.
- Refrigerate 2 hours. Slice and serve.
