I was going to use my regular box mix .. but no. Brownies from scratch always taste better. These Gooey Chocolate Chip Brownies come together in just one bowl, the chocolate melts into something rich and glossy, and the smell from the oven fills the whole kitchen. It’s simple, a little slower, and completely worth the extra few minutes.
These brownies are soft in the center, slightly crisp on the edges, and deeply chocolaty without being overly sweet. The kind you cut into while they’re still warm, maybe with a cup of coffee or glass of milk near-by and then suddenly everything feels more cozy.

Gooey Chocolate Chip Brownies
Ingredients
- 4 ounces butter
- 1/2 cup semi-sweet chocolate chips
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 3 large eggs
- 2 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened coco powder
- 1/2 tsp salt
- 3/4 cup semi-sweet chocolate chips folded in
Instructions
- Preheat oven to 325 degrees F. Line a 9X9 inch baking pan with parchment paper and lightly grease it.
- Melt 4 ounces of butter and 1/2 cup of chocolate chip in a sauce pan. Remove from heat.
- Pour into a large mixing bowl. Whisk in 1 cup granulated sugar and 1/2 cup brown sugar - mixture should be glossy.
- Add 3 large eggs, one at a time, whisking well after each. Stir in 2 tsp vanilla extract. Whisk vigorously for about 60 seconds to create a shiny top with that cracked look.
- Fold in 3/4 cup all-purpose flour, 1/2 cup coco powder (unsweetened), and salt. Don't over mix.
- Fold in the chocolate chips saving a few to sprinkle on top.
- Pour batter into prepared pan and spread evenly. Sprinkle reserved chocolate chips over the top and bake 28-32 minutes. Use a toothpick to test when you think your brownies are ready.
Notes
Don't overbake. For maximum gooeyness, remove when the center is slightly underdone. The brownies will continue to back when removed from the oven.
