Maple Banana Bread with Cinnamon Butter

Maple Banana Bread with Cinnamon Butter might be my favorite version of this classic favorite. This easy to make, one bowl recipe is so cozy. Before you toss the dark, spotty bananas, consider trying this banana bread, it’s the perfect bread to whip up mid-week for a little treat and makes a delicious addition to brunch on the weekend. The best part is the cinnamon butter.. the honey and butter combo is over the top!

Maple Banana Bread with Cinnamon Butter

Start with three very ripe bananas, spotty or all black and very soft. This will ensure they are really sweet and perfect for baking. I’m talking practically black bananas and very soft. If they’re just too black to eat, they’re perfect for banana bread.

Mash the bananas and add (mostly) melted butter, maple syrup, eggs, and a little bit of vanilla. Add flour, cinnamon, and a dash of salt. The cinnamon subtle, unexpected and really makes the banana bread batter so delicious. It’s subtle enough that you can’t really tell it’s there, but it adds a special touch.

Banana Walnut Bread with Cinnamon Butter

Ingredients

  • 1/4 cup melted butter
  • 1/4 cup maple syrup
  • 3 mashed bananas
  • 1 tbsp vanilla extract
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 tsp cinnamon
  • 2/3 - 1 cup chopped walnuts (lightly toasted)
  • Cinnamon Butter: 8 tbsp softened butter, 2 -3 tsp cinnamon, 1/4 cup honey. - beat the butter, honey, cinnamon, and a pinch of salt if you'd like.

Instructions

1. Preheat the oven to 350° F. Liberally grease a 9×5 inch bread pan.

2. In a bowl, add mashed bananas, melted butter, maple syrup, eggs, and vanilla. Stir to combine.

3. Add dry ingredients: flour, baking soda, cinnamon, and salt. Mix and then fold in the walnuts.

4. Pour batter into prepared baking dish and bake for about 50 minutes until done and golden brown on top.

5. While your bread bakes, make the cinnamon butter. In a bowl, add softened butter, cinnamon, and honey. Using a hand mixer, beat until light and fluffy. Spread on warm banana bread.

Notes

Raw nuts are more difficult to digest. For that reason I recommend toasting at 250 degrees F. for about an hour.
