Seems daunting but roasting a whole chicken is a simple and follow these simple instructions and you’ll enjoy delicious meal that your family will ask for time and time again. This recipe is a family recipes that’s been passed down and updated over the decades. There are a few variations depending on the season.

Where to begin
When I’m shopping for whole chickens to roast, I look for fresh (in the meat department) and organic if possible. If there aren’t fresh chickens available I’ll get one that’s in the meat case (check use-by dates!). When I’m ready to roast the chicken I remove the wrapping and place it in my sink. I give the bird a good rinse and sometimes I add a little course salt. Cleaning the chicken is important!
Pat the chicken to remove excess water and place in a baking pan with lots of salt and pepper. Preheat the oven and then dress the bird. Cut up potatoes (use sweet potatoes if you’d like), onions, and sliced carrots. Add to the baking pan lots of garlic along with your favorite herbs and then bake for about 90 minutes or until golden brown.
Oven Roasted Chicken Recipe
This is so easy to put together and tastes delicious!
Ingredients
- 4 or 5 pound whole chicken
- 1 or 2 sprigs of Rosemary
- 1 Tb Kosher salt or more if needed
- pepper to taste
- 1 or 2 carrots, diced
- sweet or russet potato - one or more if you have space in your pan
- 1 garlic bulb
- 1 whole lemon
- one onion, rough chop
- 2 Tb butter
- 2/3 cup chicken or bone broth (I usually add a little white wine)
Instructions
- Preheat oven to 400 degrees F.
- Wash and dry chicken
- Wash and dry veggies, cut into bite size pieces
- Salt chicken, top and bottom
- Add some of your veggies to the bottom of the pan
- Place chicken on top and add remaining veggies and any herbs you'd like
- Stuff chicken with some of the onion and 1/2 lemon.
- Keep adding whatever veggies you have room for under and around the chicken
- Add the garlic bulb (you can add olive oil to the garlic if you'd like)
- Top with Rosemary and butter
- Bake for about 90 minutes or until golden brown.
Notes
If I'm in a rush I will turn up the heat to 425 F. If I have time I'll take the temperature down to 375 F. and allow to cook for longer.

This gives me all the early Springtime feels when its still not light much longer but a little and we are still having to be inside nights but want more light.. longing. I can imagine making this in a darker kitchen with all the surrounding harmonious things like candlelight, with the dream of remembered song on my lips smacking for the soul-nourishing meal to come setting the table and the stage for whatever is possible as March promises, waiting…
