Roasted Brussels Sprouts, Apples, and Ghocchi

Oh. My. Goodness. So delicious. This serves 4 as a side dish however I think I can eat 1/2 the pan myself! Have you tried roasting apples with Brussels sprouts? If you haven’t you need to give it a try! Adding the gnocchi was an afterthought and wow, so delicious. I hope you’ll give this a try!

Yield: 4 servings/side dish

Roasted Brussels Sprouts, Apples, and Ghocchi

Roasted Brussels Sprouts, Apples, and Ghocchi

You might consider making two pans!

Ingredients

  • 2 cups sliced Brussels sprouts
  • 2 cups diced apples
  • 1/4 cup olive oil
  • salt and pepper
  • 4 tbsp butter
  • 2 cloves crushed garlic
  • 16 ounce package gnocchi

Instructions

  1. Preheat oven to 425 degrees F. and line a baking sheet with parchment paper.
  2. Clean and slice Brussels sprouts.
  3. Dice apples.
  4. Toss with olive oil, salt, and pepper liberally and place on baking sheet.
  5. Bake until golden, about 25 minutes.
  6. Boil gnocchi according to manufacturers instructions.
  7. Melt butter in sauce pan. Add garlic and saute until fragrant.
  8. Add ghocchi and saute until crispy on the outside.
  9. Remove cooked Brussels sprouts and apples. Toss with ghocchi and serve!
