Oh. My. Goodness. So delicious. This serves 4 as a side dish however I think I can eat 1/2 the pan myself! Have you tried roasting apples with Brussels sprouts? If you haven’t you need to give it a try! Adding the gnocchi was an afterthought and wow, so delicious. I hope you’ll give this a try!

Roasted Brussels Sprouts, Apples, and Ghocchi
You might consider making two pans!
Ingredients
- 2 cups sliced Brussels sprouts
- 2 cups diced apples
- 1/4 cup olive oil
- salt and pepper
- 4 tbsp butter
- 2 cloves crushed garlic
- 16 ounce package gnocchi
Instructions
- Preheat oven to 425 degrees F. and line a baking sheet with parchment paper.
- Clean and slice Brussels sprouts.
- Dice apples.
- Toss with olive oil, salt, and pepper liberally and place on baking sheet.
- Bake until golden, about 25 minutes.
- Boil gnocchi according to manufacturers instructions.
- Melt butter in sauce pan. Add garlic and saute until fragrant.
- Add ghocchi and saute until crispy on the outside.
- Remove cooked Brussels sprouts and apples. Toss with ghocchi and serve!
