A tender, warmly spiced coffee cake made with buttermilk, brushed with a simple coffee soak, hen topped with creamy vanilla-cinnamon buttercream and a little coffee syrup drizzle.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp cardamom
  • 6 tbsp unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 cup buttermilk
  • 3 tbsp expresso or brewed coffee (decaf works)

Instructions

  1. Preheat oven to 350 degrees F. Grease 8X8 inch baking pan and line with parchment paper in the center, leaving a little overhang to help remove the cake.
  2. In medium bowl, whisk flour, baking powder, baking soda, salt, and warming spices.
  3. In large bowl, beat softened butter, granulated and brown sugar until light a fluffy, about 2 minutes.
  4. Add eggs one at a a time and then stir in the vanilla.
  5. In a small bowl, mix coffee (cooled) and buttermilk
  6. Add dry ingredients to butter mixture in three additions, alternating with the buttermilk mixture. Begin and end with the dry ingredients. Mix until incorporated without over mixing.
  7. Spread in to baking pan and bake for 28 to 35 minutes or until the center is set.
  8. Allow to cool for about 10 minutes prior to removing from pan.

Notes

You can use 2 tsp of pumpkin pie spice instead of the varied spices.

  1. Beat the softened butter with an electric mixer for a few minutes or until light and fluffy.
  2. Gradually add powdered sugar, mixing on low until incorporated.
  3. Add te vanilla, cinnamon, and 1 tablespoon of half-and-half. Beat on medium-high for 2-3 minutes until smooth and creamy.
