Why we like Raspberry Lemonade

When you have an abundance of anything in the summertime it’s fun to think about different ways to use up the produce while it’s still fresh. Raspberries only last a few days once picked so I thought it would be fun to make a concentrate with lemon, sugar, and mint for the warm summer evenings ahead. Less sugar is best so I choose extra ripe berries and then I need very little sugar for a delicious summer beverage.

First and most important, make sure you have ripe, sweet raspberries! That makes a huge difference in how your lemonade tastes and allows you to add less sugar. I used two baskets of raspberries and about 3/4 cup lemon juice for my lemonade. Start by juicing your lemons. Use this lemon squeezer to make that process super simple. blending the lemon juice with the raspberries. Add in thyme or mint along with a little bit of sugar and blend again. Now you have a concentrate! Add water to desired consistency and flavor. You don’t have to, but I recommend straining the juice otherwise you will be chewing on raspberry seeds. I recommend adding a cup or two Next I poured the lemonade into mason jars and garnished with mint and chamomile from the garden. This is delicious on a warm summer day when you are craving something sweet and cold to drink!
