Soft Gingerbread Cookies

I’ve been baking these for decades and they are so delicious! The key to soft gingerbread cookies is the molasses and I remove them from the oven when they are almost finished baking.

Tips:

Make sure your dough is cold when your roll it out. For the frosting, use Meringue Powder. It’s so good! You can also add little candies like red hots, sprinkles, etc..

Tools:

Electric MixerWilton Tip #4 for outlining and flooding the cookie. Smaller tips can be used for details.

Meringue Powder:

Use 4 cups powdered sugar plus 3 Tablespoons of Meringue Powder and 6 or more tablespoons of water. The consistency should be slightly runny. Fill disposable piping bags, add the tip and start frosting!

Soft Gingerbread Cookies

Simple gingerbread cookie recipe that can be frozen!

Ingredients

  • 3 cups all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup packed brown sugar
  • 10 Tablespoons butter
  • 3/4 cup dark molasses
  • 1 large egg, room temperature
  • 1 Tablespoon ground cinnamon
  • 1 Tablespoon ground ginger
  • 1/2 teaspoon cloves
  • 2 Tablespoons milk

Instructions

  1. Add dry ingredients in to a large bowl and whisk until combined.
  2. In a hand held or stand up mixer with a paddle attachment, mix butter until fluffy, about two minutes.
  3. Add the molasses and brown sugar. Beat on medium speed until combined and creamy consistency.
  4. Add egg and milk. Beat on for 2 minutes scraping down sides of bowl as needed.
  5. Add dry ingredients to wet ingredients and beat on low speed until combined. The dough will be thick.
  6. Divide in half and wrap in saran wrap. Refrigerate for a few hours or overnight. You may freeze dough if you'd like.
  7. Preheat oven to 350 degrees F. Line 2-3 large baking sheets with parchment paper or silicone mat. These are helpful.
  8. Roll out dough and cut into cookies. I like this cookie cutter mold.
  9. Bake for 9-10 minutes.
