There’s a version of oatmeal I make on the mornings I actually want to slow down and this is it. I start by making creamy oatmeal, then top it with bananas caramelized in butter and brown sugar until they’re soft, golden, and just barely holding their shape.

It’s the kind of breakfast that feels like it took effort, but really just takes patience. Five minutes at the stove, a little attention, and suddenly an ordinary bowl of oatmeal feels like something worth sitting down for.


What you need from market:
• Oatmeal
• Bananas
• Butter
• Brown sugar
Pumpkin pie spice


How to Make It:
Start your oatmeal as you normally would, stirring in a bit of flaky sea salt while it cooks.
While that’s going, melt butter in a skillet over medium heat. Add sliced bananas and brown sugar, and let them cook until the sugar melts into a deep caramel and the bananas turn soft and golden at the edges. Resist the urge to stir too often, this is where the flavor happens.
Spoon the caramelized bananas over your bowl of oatmeal, let the caramel drip down into the warmth below, and enjoy.

Oatmeal with Caramelized Bananas

Serves 2

Ingredients

  • 2 bananas
  • 2 or more tablespoons of butter
  • 1/4 cup brown sugar or more if desired
  • 1/2 tsp *pumpkin pie spice or cinnamon
  • 1/2 - 1 tsp flaky sea salt
  • 1 cup old-fashioned oatmeal
  • 1 cup water
  • 1/2 cup or more of whole or reduced fat milk or dairy free alternative if desired

Instructions

  1. Add 2 cups water and 1 cup oatmeal to a simmering pot. Sprinkle with salt, Simmer until creamy.
  2. While the oats cook, slice up bananas and add butter to a warm/hot skillet.
  3. Add bananas followed by brown sugar and pumpkin pie spice.
  4. Sprinkle with salt and stir until the brown sugar and butter begins to caramelize.
  5. Remove from heat.
  6. Plate oatmeal and divide bananas between the two bowls.
  7. Serve!
